Era da un pò di tempo che volevo preparare questo piatto secondo la vera tradizione emiliana. Ho sempre pensato che quella che mia mamma chiama “pasta al forno” e le lasagne fossero la stessa cosa. Mi sono dovuta ricredere, gli ingredienti sono simili, ma la differenza è che nella prima si aggiunge prosciutto cotto e fontina per rendere la pietanza più sfiziosa. Domenica mi sono messa all’opera, il ragù e la besciamella sono le cose più lunghe da preparare. Quest’ ultima vi consiglio di preparla e non di comprare quella già pronta del supermercato. E’ un piatto abbastanza veloce da preparare, 2 ore più o meno più altri 40/50 minuti di cottura.

Ingredienti:

250 ml brodo di carne (io l’ho preparato con 250 ml e metà dado di manzo, quelli nuovi che sembrano gelatina)
50 gr burro
250 gr carne bovina tritata
250 gr carne di suino tritata
1 cipolla
1 carota
1 gambo di sedano verde
4 cucchiai olio extravergine di oliva
100 gr pancetta arrotolata
250 ml passata di pomodoro o 30 gr concentrato (io preferisco la passata)
pepe q.b
1 bicchiere vino rosso
1 bicchiere di latte

Preparazione:

1. Preparare il brodo di carne.
2. Tritare insieme, usando un  mixer, la carota, la cipolla e il sedano.
3. Scaldare l’olio e il burro e aggiungere il trito. Far rosolare qualche minuto.
4. Tritare finemente la pancetta e aggiungerla insieme alla carne tritata al soffritto precedentemente preparato.
5. Far cuocere qualche minuto a fiamma vivace.
6. Aggiungere il bicchiere di vino rosso e farlo evaporare mantenendo la fiamma sempre viva.
7. Aggiungere la passata, il brodo (lasciandone un pò da parte).
8. Aggiustare di sale e pepe.
9. Lasciar cuocere il ragù per un’ora circa.
10. Quando vedete che manca poco al termine aggiungete il brodo restante e il bicchiere di latte.
11. Preparate la besciamella secondo la ricetta che preferite (io ho usato quella che c’è sulla confezione delle lasagne).
12. Quando il ragù è pronto iniziate a preriscaldare il forno a 160 °C.
13. Imburrate una teglia e iniziate a fare gli strati.
14. Preparate il fondo spalmando un paio di cucchiai di ragù.
15. Aggiungete la pasta.
17. Coprite con abbondante besciamella e con abbondante ragù.
18. Spolverate con abbondante parmiggiano reggiano.
19. Coprite con altra pasta e ripetete i precedenti passaggi per realizzare il secondo strato.
20. Formate più strati a seconda della capienza della teglia.
21. Mischiate il ragù avanzato con un pò di besciamella e versatelo sulla pasta per realizzare lo strato finale.
22. Coprite con abbondante parmiggiano reggiano.
23. Informate per 50 minuti circa, le lasagne sono pronte quando risultano dorate e croccanti.
24. Sfornatele e servitele dopo averle lasciate raffreddare 10 minuti.
